Jerk Dry Rub perfectly balances peppery heat with a hint of sweetness and rich Island spices to complement meats and vegetables.
In addition to rubbing directly on meat prior to cooking, you can mix Jerk Dry Rub with orange or lemon juice to make an excellent
marinade. Sprinkle some on your veggies for exotic side dishes!

Recipe for Jerk Ribs
2 lbs. Pork or Beef Ribs
"Jerk Rub".
Sprinkle dry rub onto all surfaces of Rib - or - In a bowl, combine ¼ cup, jerk rub with ½ cup of orange or lemon juice
mix well, (add more juice if needed ) let chicken marinade for at least four (4) hours, longer if possible.
Prepare grill with a drip pan, bank coals on either side of drip pan for indirect cooking.
Place Ribs on grid over drip pan. Grill on covered grill, over low coals 1 1/2 hour or until Ribs are done, turning occasionally.
Conventional Directions: Prepare Ribs as directed above. Roast chicken on rack in shallow pan in 350°F oven for 1 1/2
hour or until Ribs are done.
